Japanese Bluefin Harakami

Harakami is one of the most prized cuts of Japanese Bluefin tuna, taken from the upper belly area near the collarbone—where the richness of otoro meets the refined texture of chutoro. Known for its perfect balance of marbling, tenderness, and clean ocean flavor, Harakami delivers an unparalleled mouthfeel with each bite.

Omi Wagyu

Hailing from the lush, water-rich landscapes of Shiga Prefecture, Omi Wagyu is one of Japan’s most prestigious and historic beef brands—with over 400 years of tradition. Renowned for its delicate marbling, rich umami, and melt-in-your-mouth tenderness, Omi is considered one of the “Top Three Wagyu” of Japan, alongside Kobe and Matsusaka.

Once presented to shoguns and now an official supplier to the Imperial Household Agency, Omi Wagyu delivers an elegant balance of sweetness and depth—offering a refined flavor that reflects the purity of its natural upbringing.

Gokujo Hokkaido Uni

Like Wagyu beef, Hokkaido Uni is carefully graded in Japan—evaluated for its color, texture, freshness, and overall condition. Gokujo (極上) represents the highest possible grade, equivalent to an “A5” quality rating in beef.

Only a select few trays each day receive the Gokujo tag, signifying they are among the top 10 uni of the entire market. With flawless color, creamy texture, and briny sweetness, this uni is the pinnacle of ocean flavor—delivered at its absolute best.
